Baked tomato rice

Serves 4


  • 2 salt reduced stock cubes
  • 2 cups water
  • 1 onion, chopped
  • 425g can tomatoes
  • 1½ cups brown rice
  • 440g can corn kernels
  • 185g can tuna, drained


  1. Preheat oven to 180°C.
  2. Dissolve the stock cube in the water.
  3. Mix all ingredients into a small baking dish.
  4. Cover with lid or foil and bake for 30-35 minutes until rice is tender.
