- 4 green apples, grated
- 4 cups rolled oats
- 2 cups apple juice
- 2 cups low fat natural yoghurt
- ½ teaspoon cinnamon
- 1/2 cup pepitas
- 1.5 cup strawberries halved or berries (optional)
- Mix the grated apple with the rolled oats, apple juice and cinnamon in a large bowl until well combined. Cover and store in a fridge overnight.
- The next day, stir the soaking muesli in with the yoghurt and top with pepitas and halved strawberries.
- Try adding different seasonal fruit to the top.
