The following two healthy recipes were featured at our 2014 Healthy Kids Association Exhibition and Training Day. Try them in your canteen!

Pizza/Pasta sauce

This sauce can be used on homemade pizzas as the base. Or, it can be used as a pasta sauce – serve as is or mix with cooked minced beef.

  • 3 tbsp olive oil
  • 2 onions, diced
  • 2 cloves garlic, crushed
  • 2 carrots, diced
  • 2 zucchinis, diced
  • 1 red capsicum, diced
  • 1 green capsicum, diced
  • ½ bunch celery, diced
  • 2 x 3kg tins chopped tomatoes
  • 1 tsp sea salt
  • 1½ tsp ground black pepper
  • 1 tsp paprika
  • ½ bunch basil leaves, shredded
Method

1. Heat olive oil and sauté onions and garlic in a skillet.

2. Add chopped vegetables and cook until they have softened.

3. Add crushed tomatoes, pepper, salt, paprika and basil leaves. Simmer for 20 minutes.

4. Remove from stove, blend, allow to cool and place in containers for freezing.

Tip: Use wholemeal family pita bread as a pizza base, add toppings and sprinkle with reduced-fat shredded cheese.

hamburger

Hamburger patties

Makes 60

  • 5 kg premium mince
  • 2 carrots, shredded
  • 2 zucchinis, shredded
  • 6 eggs
  • 2 tsp paprika
  • 1 tsp salt
  • 1 tsp ground black pepper
Method

1. Mix vegetables with mince.

2. Make a well in the middle of the mince, add eggs and fold the mince into the well.

3. Add paprika, salt and pepper.

4. Roll mixture into 80g balls, then flatten each ball.

5. Place in a container with plastic or baking paper between each layer and freeze. Take out as needed and defrost before cooking.

Preparing the hamburgers
  • 2 tbsp olive oil
  • Hamburger patties (from the recipe above)
  • Tomato and other desired salad ingredients such as cucumber or beetroot
  • Lettuce leaves
  • Tomato sauce
Method

1. Pre heat oven to 180°C

2. Heat olive oil in a skillet, add hamburger patties and seal each side.

3. Remove patties from skillet, place on an oven tray lined with baking paper and bake until they are cooked through (10-15 minutes). Take them out of the oven and let them rest (5 minutes).

4. Assemble the hamburger using the fresh ingredients. Use wholemeal buns if possible.
