Bircher Muesli

Yields10 Servings

 4 green apples, grated
 4 cups rolled oats
 2 cups apple juice
 2 cups low fat natural yoghurt
 ½ tsp cinnamon
 ½ cup pepitas
 1 ½ cups strawberries halved or berries (optional)

Mix the grated apple with the rolled oats, apple juice and cinnamon in a large bowl until well combined. Cover and store in a fridge overnight.

The next day, stir the soaking muesli in with the yoghurt and top with pepitas and halved strawberries.

Serve.
