Easy Bruschetta

Yields24 Servings

 12 wholemeal or wholegrain bread rolls, halved
  cup olive oil
 12 tomatoes, diced
 4 garlic cloves, crushed
 4 tbsp basil, finely chopped

Brush the bread slices lightly on both sides with the olive oil.


Toast the bread slices (in batches if necessary) for 1-2mins on each side until golden. Set aside.


Place the tomato in a bowl with the garlic, basil and remaining olive oil. Season and stir to combine.


When ready to serve, pile the topping onto the bread and gently press down with a fork to hold the topping in place.


Serve on a napkin or waxed paper
