Jingle Bell Guac

 4 ripe avocados
 3 spring onions, finely sliced
 2 tbsp lemon juice (to taste)
 1 ripe tomato, chopped
 1 red capsicum, sliced
 1 green capsicum, sliced

Cut avocados in half and remove the pit. Scoop out the flesh and place into a bowl.

Mash avocados with a fork.

Mix in the spring onion, lemon juice and tomato.

Distribute guacamole evenly between serving cups.

Add red and green capsicum strips to each cup and serve.
