In a bowl, place the lemon juice and the apples. Stir well.
Add the chopped celery, parsley and chickpeas. Mix well.
Slowly pour in the mayonnaise and stir well.
Divide into six salad containers and sprinkle the pumpkin seeds evenly on top.
