Nut-free Waldorf Salad
½ lemon, juiced
3 granny smith apples, halved and sliced
3 red delicious apples, halved and sliced
5 sticks celery, thinly chopped
½ cup parsley, chopped
1 tin of chickpeas, roasted in the oven
1 cup fat-free mayonnaise
½ cup pumpkin seeds, toasted
In a bowl, place the lemon juice and the apples. Stir well.
Add the chopped celery, parsley and chickpeas. Mix well.
Slowly pour in the mayonnaise and stir well.
Divide into six salad containers and sprinkle the pumpkin seeds evenly on top.
