Cut the cabbage into quarters and remove the core and hard outer layers.
Chop the cabbage into very thin strips or grate it if you can.
Place the chopped cabbage into a large bowl and toss with the pepper, olive oil and vinegar.
Cover the bowl with wrap and let the cabbage absorb the dressing for 10-15 minutes.
Serve topped with chopped shallot (optional).
