Classification

NSW:  EVERYDAY   ACT: GREEN

Ingredients

8 slices bread, preferably wholemeal or multigrain
 8 eggs
 Herbs and/or pepper, to taste

Method

1

Preheat oven to 200ºC and line baking tray with baking paper.

2

With a festive cookie cutter, press a hole in the centre of each slice of bread, then place each slice of bread on the lined baking tray. See the "tips" on what you can do with the leftover bread trees.

3

Carefully crack one egg into the hole of each slice of bread.

4

Bake in the oven for approx. 8 minutes or until the egg white is no longer clear and the toast is golden.

5

Once taking out of the oven, carefully re-press the cookie cutter into each slice of toast. This will make the shape stand out.

6

Season with herbs and/or pepper to your preference and serve.

Tips

  • With the discarded bread trees, you could make our Toasty Trees, or you could add them onto the baking tray and with the egg in a holes and serve together.
  • If you have enough oven-safe cookie cutters (it depends how many serves you are making) – you could leave the cookie cutter in while you bake, but remember to grease it first!
