Baked Tomato Rice

Ingredients

 2 salt-reduced stock cubes
 2 cups water
 1 onion, chopped
 1 x 425g can tomatoes
 1 ½ cups brown rice
 1 x 440g can corn kernels
 1 x 185g can tuna, drained

Method

Preheat oven to 180°C.

Dissolve the stock cube in the water.

Mix all ingredients into a small baking dish.

Cover with lid or foil and bake for 30-35 minutes until rice is tender.
