Chicken Patties 4 Ways

Ingredients

 500 g lean chicken mince
 100 g mushrooms, roughly chopped
 1 stick celery, roughly chopped
 1 onion, roughly chopped
 1 egg
 ½ cup fresh breadcrumbs

Method

Combine all ingredients in a food processor until smooth.

Divide mixture into six, and shape into patties.

Spray a non-stick pan with oil and cook patties for 4-5 minutes on each side until brown and cooked through.

Tips

  • Grate or blend the end pieces of a loaf of bread to create breadcrumbs

 

Serving suggestions

  1. Serve on a wholemeal roll with lettuce, tomato, cucumber and a small amount of mayonnaise, sweet chilli sauce or tzatziki.
  2. Roll meat mixture into small meatballs, cook as above and serve with pasta, tomato sauce and reduced-fat cheese for an easy Spaghetti and Meatballs.
  3. Coarsely chop cooked leftover patties. Cut wholemeal roll in half, spread each side with tomato sauce, sprinkle with mince mixture and top with reduced-fat cheese. Grill until cheese is melted.
  4. Serve with salad and sweet chilli sauce! Try mango, cucumber and lettuce OR rice noodles, cucumber, capsicum, and carrot.
