Ingredients

 1 ½ cups milk
 1 egg
 1 cup self-raising flour
 1 cup wholemeal self-raising flour
25 g polyunsaturated or monounsaturated margarine
 ¾ cup sultanas

Method

1

Whisk milk and egg together in a jug.

2

Sift flours into a bowl. Make a well in centre. Add milk mixture and whisk until just combined.

3

Heat a large non-stick frying pan over medium heat. Brush pan with margarine. Pour ¼ cup mixture onto the pan. With the sultanas, create a cross on the pancake. Let the pancake cook for 2 to 3 minutes or until bubbles appear on surface.

4

Flip pancake and cook until cooked through.

5

Transfer to a plate. Cover loosely with foil to keep warm. Repeat with remaining mixture and sultanas, brushing pan with margarine between batches.

6

Serve.

Variations

  • Instead of sultanas, you could use blueberries! Alternatively, you could use honey, maple syrup or yoghurt to create the "cross" when serving the pancake.
  • Whether or not your school/family celebrates Easter, this recipe is delicious! Instead of a cross, you could always do a smiley face 🙂
