Ingredients
Method
In a bowl, place the lemon juice and the apples. Stir well.
Add the chopped celery, parsley and chickpeas. Mix well.
Slowly pour in the mayonnaise and stir well.
Divide into six salad containers and sprinkle the pumpkin seeds evenly on top.

- Serve this as a standalone salad or in a roll or wrap with roasted meats such as pulled pork or roast beef.
