Ingredients

 4 wholemeal English muffins, halved and toasted
  cup ricotta cheese, reduced-fat
 ½ red capsicum
 ½ green capsicum
 ¼ yellow capsicum
 1 cucumber, ends trimmed
 1 tbsp hommus

Method

Spread ricotta evenly over English muffins.

Chop red, green and yellow capsicum into various shapes, such as cubes and strips.

Decorate the English muffin with capsicum pieces – get creative here!

Cut cucumber in half lengthwise, then cut each half into 4 even pieces, to make a total of 8 pieces. These will be the top of the baubles, and should be about 2cm long.

Stick cucumber onto the top edge of each English muffin using hommus, then serve.

Variation

  • Try spreading beetroot hommus or avocado over English muffins instead of ricotta for an extra festive look.
