Watermelon & cucumber salad

Ingredients
Method
Chop watermelon into 2cm cubes.
Chop cucumber in half lengthwise, then thinly slice each half.
In a large bowl, place chopped watermelon and cucumber slices.
Optional: add mint to watermelon and cucumber and toss through.
Serve in a bowl.
Variations
- Adding 2 cups of chopped pineapple or pineapple chunks in juice also works well in this recipe.
- Crumble reduced-fat feta cheese or add a tablespoon of yoghurt to the salad for an extra flavour kick.
